Mediterranean Quinoa Salad

The beauty of this recipe comes in the feta cheese. What I love about feta is that a very small amount adds a lot of flavor without adding a lot of calories or fat. This recipe is very low in carbs as well. It’s a protein packed salad with Mediterranean flavors – quinoa, cucumbers, tomatoes, kalamata olives, red onion, extra virgin olive oil, and fresh lemon combined makes a healthy salad with fresh clean ingredients.

The Root of Will
Ever since I wrote the book and started this blog I have had a number of people engage me in conversations about weight loss. People typically have very strong and passionate opinions about weight loss (sometimes the opinions are even correct). They will discuss with me their plans, goals, and commitments. Unfortunately, in spite of their good intentions, most suffer the same fate. Their enthusiasm leads to new work out programs or diet commitments that usually sputter out after a few weeks. They then come back to me at a later time with a new commitment that will likely follow the same pattern.
