As usual, I’m posting a recipe that my wife, in her constant culinary exploration, has discovered. She’s constantly experimenting with healthy recipes and this was one of my favorites. It’s a great snack food. It’s easy to make, high bulk, and low calorie. Feel free to get creative and experiment with different spices. Enjoy!

Makes a single 8 oz serving
133 calories, 5.2 g fat, 21.7 g carbohydrates, 10.8 g sugar, 2.1 g protein, 6.3 g fiber, 156 mg sodium

Heat oven to 450 degrees. Line a rimmed baking sheet with parchment paper. Slice carrots into thin strips about 4 inches long and ¼ inch wide.½ pound carrots, peeled
1 teaspoon extra virgin olive oil
salt to taste
Toss carrots, olive oil, and salt on baking sheet and roast for 20 minutes or until the ends start to blacken.
Serve immediately.
