Butternut Squash and Barley Salad

KRsM9QwLast’s weeks post (Slow Cooker Honey Garlic Chicken) was so popular that I figured I’d post another one of my wife’s favorite recipes.  This one I really love when she makes. The egg is optional.  If you want to ratchet up the protein add more scrambled or hard boiled egg whites.   Continue reading “Butternut Squash and Barley Salad”

In Response to the Voice

the voice in your head is a liar

You know that voice in your head, the annoying one, that stands in the way of all your successes.  It’s the one that tells you all the reasons you can’t, won’t, or shouldn’t.  We all have it so I’m sure you know what I’m talking about.  I’ve been thinking a lot about this voice recently and have noticed some important things.   The voice does not work by overpowering you.  Its success comes from its endless needling at you until you give in without even realizing you have succumbed.   It’s small but relentless.  It never fatigues.  This is the voice that is preventing you from succesffully losing weight.  But you already knew that, its your voice after all.

Orange Chicken Fingers

Orange Chicken Fingers

Being the father of four kids (one of them an extremely picky eater) I know how hard it is to find foods that everyone will eat.   I can say that I know from experience but my knowledge is second hand as its my wife that bears the brunt of this challenge so gracefully.  If you throw on top of this the challenge of finding healthy options for your kids to help them develop and prevent you from feeling always guilty, you’re in for it.   Continue reading “Orange Chicken Fingers”

The Secret of Change

change 7I was sitting in my office with a patient of mine the other day having a conversation I find myself having frequently.  She was a long time smoker who I had diagnosed with severe COPD (the lung disease caused by damage from smoking).  She had been hospitalized and was close to needing oxygen.  Yet, in spite of my warnings and castigations, she had broken her brief period of abstinence and was back up to “only a half pack a day”.  She was staring at the floor unable to look me in the eye like a child caught misbehaving by their parents. Why You Can’t Be Trusted

There is a principle in the world of weight loss that is essential to helping you understand why people are unsuccessful at losing weight.  Human beings are extremely inaccurate in estimating their caloric intake.  By human beings, I mean you.  I also mean me, but I already read this so, I’m directing this to you.  I often hear people tell me that they “watch what they eat” or that they “eat healthy” and yet they cannot lose weight.   When pressed, they are almost never able to tell me exactly what this means.  This creates one of the greatest obstacles to weight loss.  People have absolutely no idea how many calories they are consuming.    Continue reading “Why You Can’t Be Trusted”

Mediterranean Tuna Salad

Mediterranean tuna salad

My ongoing and epic saga to to cut carbs and increase protein continues of late.  I have previously discussed why low carb diets are effective (Maybe A Calorie Isnt. Just a Calorie) and why getting enough protein is so difficult and important (Pro Protein).  Check out those posts to get the dish on those topics.  Speaking of a dish, I have decided to substitute salad with tuna and feta for my lunch.  This is a great option for many reasons.   Continue reading “Mediterranean Tuna Salad”

Quinoa “Fried Rice”

source: skinnytaste.com

I was trolling my favorite recipe site skinnytaste.com to find a gluten-free recipe since that is all the rage.  I figured it would be good for all our Jewish friends who will be leaven-free for the next week or so as well.  When going gluten-free quinoa is a great way to go.  This South American seed has many grain-like qualities without actually being a grain.  It is a great lower calorie substitute for rice or pasta.  Enjoy!
