Healthy grilled chicken kabobs

zesty grilled chicken2It’s that time of year where the days are long, the nights are humid, and the mosquitos are militant. It’s also the time of year when people are out in the yard firing up the grills. Unfortunately, typical BBQ fare is not always the most diet friendly. Have you seen the nutrition facts on a hot dog with a bun? Its not pretty. And who only has one? For this reason, I found us a recipe that can satisfy our innate American need to cook meat on fire wihtout satisfying our American tendency to be morbidly obese. Happy grilling Continue reading “Healthy grilled chicken kabobs”

The best Spaghetti Squash Recipe

spagsqshcaprese-8

My wife found this one and since I’m a big fan of the spaghetti squash pasta substitution, I thought I’d post it for you.  The beauty of spaghetti squash is that it a nearly zero calorie substitution for the greatest enemy to weight loss, pasta.  Spaghetti squash allows you to enjoy all your favorite pasta dishes without eating the extra 500 calories (or more) of pure carbs.  This recipe comes from http://pinktrollkitchen.com.  Go check out the other recipes they have. Enjoy!

Easy Ginger, Chili, and Lemon Salmon

Ginger-Salmon-(2)As I sit locked indoors afraid to brave the freezing cold outside, I have been daydreaming of the coming spring.  I long for a morning where my mood is not sucked into a winter vortex waiting for my car to warm up.  For that reason, I thought I would try to warm up our hearts and stomachs by finding a recipe that is light and airy like a sping breeze.  I found this one from http://www.theironyou.com.  Enjoy!

Warm Sweet Potato Salad

warm sweet potato salad 1I love sweet potatoes.  They are nutritionally equivalent to white potatoes but they add a lot more flavor which means you need less quantity to get better quality in terms of flavor.  If you want to add protein and make it a meal, throw in some chicken breast to make it more substantial.  Regardless, this recipe is a good low calorie healthy one with a bit of spice thrown in to help you keep warm in the cold winter months.  I got this one from http://deliciouslyella.com.  Enjoy!

Warm Chicken Salad With Chili and Spinach

warm chicken spinach salad4It’s freezing cold outside here in Baltimore and, against all our wishes, we are all trapped in our homes for fear of losing digits if exposed to the elements.  One of the problems with being stuck inside is that boredom can lead to snacking and the snacks one eats when bored are not generally good for losing weight.  For that reason, it takes some thought and planning to find meals that will keep you warm and keep you healthy.  The key to staying in control is a small amount of forethought and a bit of determination.  To help you my wife found this gem of a recipe which is both nutritionally balanced in the right way (high protein, low carbs), easy to make, and a bit spicy to warm you up on the inside.  In fact, this recipe in my opinion has too few calories per serving as posted on their blog.  I would recommend having it serve one or two people and will calculate the nutrition facts as such.  The spicy part is optional for those of you who have tender taste buds.  This one comes from foodmanna.net so give them some love and check out their other recipes. Enjoy!
